
This easy banana bread recipe is a timesaver for busy moms! It’s super simple to make that I, even though baking isn’t my thing, can make it without failure.

Ingredients:

- 2 Bananas (ripe ones with brown dots are better)
- 1 tbsp Ground Zucchini
- 80g Butter
- 2 Eggs (take them out of the fridge first)
- 60g Sugar (I used organic cane sugar)
- 1 tbsp Cocoa Powder
- 200g Pancake Mix ( I use President Choice Pancake & Waffle Mix)
- 20g Dark Chocolate Chips + a few go on top of the mixture

Cooking Instruction for Simple Banana Bread

Step 1: Prepare for mixing – easy banana bread
First, if you have a flour sifter, use it to reduce the lumps in the pancake mix. it’s not a must, so don’t worry.
Next, you need to grate your zucchini and put it aside. Next, melt butter in the microwave for 20 seconds or heat it up an alternate way. Once both tasks are done, peel the bananas and break them into smaller pieces in the mixing bowl. Then use a fork to mash them into a puree.
From now on, it’s all about adding an ingredient and mixing it well each time. But before you start mixing, let’s preheat the oven to 180°C /356°F.
Step 2: Mix all the ingredient
Now that you have your puree in the bowl, you are going to add & mix these ingredients in order.
Butter → Eggs → Sugar→ Zucchini → Cocoa Powder → Pancake Mix →Chocolate chips
The butter may form into lumps in the colder season, but I found no difference in the end. Don’t worry if you miss an ingredient, just add it when you realize. Like the butter, it’ll all work out.
Simply repeat adding & mixing all the ingredients except the chocolate chips. Don’t overmix the whole mixture or else it will become flat. Then add 20g of chocolate chips into the mixture, and mix gently with a spatula.
The hardest part (for your arm) is done, so let’s get ready for baking!
Step 3: Baking the easy banana bread
Now, use a spatula and pour the batter into a loaf pan with a parchment paper lining. Then add a few chocolate chips on top and just leave them.
When the oven reaches the set temperature let’s carefully put the loaf pan onto the middle rack. Then set a timer for 35 min. The baking time varies, so keep an eye on it or use your sense of smell. Please adjust the cooking time accordingly.
Once it’s done, check inside by inserting a toothpick into the center of the loaf. A clean toothpick means it’s ready to be taken out for cooling. If it’s still gooey, add more time. But make sure you’re watching, otherwise, your smoke detector may let you know when it’s ready!
Final Step: Cooling & Serving

Finally, take out the loaf and let it cool down on a cooling rack. Use this time to put cooking tools away and tidy up, so the banana bread settles nicely for serving!
